Avocado pancake!

 

This time a pancake made with avocado! Why is avocado healthy? Eating fruits and vegetables, including avocado, reduces the risk of heart disease and stroke. In addition, there is a link between eating vegetables and a lower risk of colon cancer. Unlike other vegetables, avocado contains a lot of fat. The fat in the avocado is mainly oleic acid which is unsaturated fat. Unsaturated fat lowers the LDL cholesterol in the blood. Too high LDL cholesterol is not good for the blood vessels and can eventually lead to cardiovascular disease. So with an avocado you get good fats, just like with oil, soft and liquid margarine, fatty fish and nuts.

 

Ingredients for 2 pancakes:

  • 1 avocado
  • 2 eggs
  • ½ lemon (juice)
  • piece of ginger
  • olive oil 
  • blueberries

 

Preparation:

1. Pit the avocado. Then put it in the blender and add the eggs, a bit lemon juice and a piece of ginger. Blend until smooth.

2. Heat a tablespoon of olive oil in the frying pan and fry the pancakes until golden brown.

3. Serve with the blueberries.
