Rhubarb apple compote!

 

This time an easy recipe with apple and rhubarb. Delicious to make a compote with this fresh and sour vegetable. Because of this fresh and sour taste, rhubarb is more like fruit than vegetables. Still, the rhubarb is real vegetables. With a portion of rhubarb compote with your meal you can boost the daily vegetable consumption :-).

 

Ingredients:

  • 250 grams rhubarb

  • 250 grams apples (Jonagold)

  • 1 cinnamon stick

  • 1 teaspoon honey

  • cup of water

 

Preparation:

1. Remove the green leaves from the rhubarb, rinse the stems and cut off a piece from the bottom. Then cut the rhubarb into pieces. Peeling is not necessary if you just pull off any stiff threads. Peel the apples and cut into cubes.

2. Put the rhubarb and apple together with a cup of water in a pan and add the cinnamon stick and honey.

3. Cook and simmer gently for about 12 minutes. Stir regularly.

4. Remove the cinnamon stick and puree with a hand blender until smooth.

 

You can serve the compote both hot and cold. Nice in the morning with oatmeal or in the evening with red cabbage.
